Chicken fiesta spinach salad with avocado and chipotle dressing. Yummy! Recipe: broil 2 large boneless, chicken breast in only chicken broth at 400 degrees for about 30 to 40 min or until fully cooked. Once cooked let it sit and cool. While its cooling you can prep your other ingredients.
2 fresh tomatoes chopped.
3-4 lemons squeezed 1 white onion diced Cilantro chopped.
Once chicken has cooled put it into a food processor add all the ingredients in a bowl and mix together.
You can eat it with a salad as i have prepared it in the picture or as a quick snack on the go. Its low in calories and high in protein, and taste great! Enjoy
